This soup is indeed perfect for Meatless Mondays. It’s pretty easy to make and is ready for the dinner table in about an hour. A bowl of hearty lentil soup is not only filling but very nutritious.

You are free to use any type of lentils that you prefer. I am all for the old fashioned ones. The key to perfecting this soup is to ensure that there is enough water to cook the lentils until tender and still have some left for broth. 


You are free to add as much vegetables as you would like as well, to really fill you up. As the lentils get tender and are fully cooked, pulse about a cup to a cup and a half of the soup in a blender or food processor. Return the blended mixture back to the pot and stir to combine. This adds thickness and texture to the soup.

Ingredients
  1. 1 Cup Lentils
  2. 1 Tbs Olive Oil
  3. 1 Tbs Onions (chopped)
  4. 1 Tbs Ketchup
  5. 1 Large Carrot
  6. 1 Tsp Curry Powder
  7. 1 Tsp Green Seasoning
  8. 1/4 Tsp Red Pepper Flakes
  9. 1/4 Tsp Paprika
  10. 2 Small Tomatoes (chopped)
  11. 4 Cups Water
  12. Salt & Pepper (to taste)
Instructions
  1. HEAT oil in medium sized pot and sauce onions, carrots and green seasoning for about 2 minutes or until fragrant.
  2. ADD curry powder, paprika, red pepper flakes and chopped tomatoes. Sean with salt and pepper, stir to incorporate.
  3. COAT lentils in the seasoned mixture, then add water. Bring to a boil and then reduce heat and simmer until lentils are tender; about 1 hr.
  4. PLACE a cup to a cup and a half of the soup in a blender and blend until smooth. Return the blended soup to the pot and stir to combine.
  5. SERVE.
